Mexican gastronomy is in a constant state of progression while maintaining culinary staples like corn, beans, cacao and chili peppers. It has preserved its traditional roots while evolving into different versions of itself while holding on to its authenticity and history. The cuisine of Mexico varies from state to state, from the Oaxaca region in the southeast which borders the pacific coastline, they are known for the “seven moles”, chapulinas (grasshoppers) and epazotes (local herbs). Travel to the Yucatán peninsula and you will find specialties like “Tikin-Xic” a local fish dish topped with achiote paste and cooked inside banana leaves. A Gastronomy route in Mexico is sure to satisfy even the most discerning palates.
