The Alaouite Kingdom is a country of good living and mouthwatering delicacies. The cuisine, rich and warm, is inspired by all the delights of the East. Distinguished by the use of spices such as coriander, saffron or cumin that enhance their dishes with a spiced touch of flavor. The couscous and the tagines, and the Bastilla (Moroccan Pie), are its most celebrated dishes.
The Moroccan gastronomy, known worldwide and exemplified by its wide variety, the methods used vary from the coast to the plains. Agadir has specialized its cooking with Argan oil, while in the mountains the protagonist is the Moroccan Mechoui (slow roasted leg of lamb) cooked in an open fire pit served with cumin and salt for dipping.
The leap forward in Moroccan cuisine occurs when that tradition meets the restaurants dedicated to haute cuisine. The stimulating flavors are transformed into complex dishes. Many of those restaurants can be found within the best hotels in the country.
The strength of the hotels in Morocco and the splendor of their renewed gastronomic offer is evident. In the last Villégisture Awards, in the category of Best Hotel in Africa, no less than five establishments were among the finalists: La Mamounia (Marrakech, Morocco), Sofitel Rabat Jardin des Roses (Rabat, Morocco), Hotel Tigmiza (Marrakech, Morocco) and the Royal Mansur hotel (Marrakech, Morocco) which was chosen as "Best Hotel in Africa".
The effort that the country is making in tourism development also reaches the cultural sphere: Marrakech has been designated as the African Capital of Culture 2020. The city's agenda will become another attraction in the always evolving Morocco.
